# Expert Tips:

01 -
  • You mix everything in the dish you bake it in, so there's literally one bowl to wash.
  • The texture is somewhere between a souffle and a traditional pancake, soft and cloud-like without any banana to hold it together.
  • It reheats beautifully, so you can bake a few on Sunday and have grab-and-go breakfasts all week.
02 -
  • The batter will look slightly underdone in the very center when you pull it out, but it continues cooking as it cools and becomes perfectly set.
  • If you overbake it, the edges get chewy and the whole thing loses that souffle-like softness, so pull it when it's just golden.
03 -
  • Weigh your flour and protein powder if you can; volume measurements can throw off the texture and leave you with a dense puck instead of a fluffy bowl.
  • If the center sinks slightly as it cools, that's normal and actually creates a little well for your toppings to nestle into.
