Breakfast Crunchwrap with Eggs (Print version)

Golden tortilla filled with eggs, crispy hash browns, cheese, and savory bacon or sausage for a quick morning meal.

# What You'll Need:

→ Eggs & Dairy

01 - 2 large eggs
02 - 2 tablespoons milk
03 - 1/2 cup shredded cheddar cheese

→ Tortillas & Fillings

04 - 2 large (10-inch) flour tortillas
05 - 1/2 cup frozen hash browns, thawed
06 - 2 slices cooked bacon or 2 breakfast sausage patties (optional, can substitute with vegetarian alternatives)
07 - 1/4 cup salsa

→ Seasonings & Oil

08 - 1/4 teaspoon salt
09 - 1/8 teaspoon black pepper
10 - 2 teaspoons butter or oil

# Directions:

01 - In a mixing bowl, whisk together eggs, milk, salt, and black pepper until fully combined.
02 - Heat 1 teaspoon of butter or oil in a nonstick skillet over medium heat. Add hash browns and cook until golden brown and crispy, approximately 3 to 4 minutes per side. Remove from skillet and set aside.
03 - Using the same skillet, pour in the egg mixture. Cook over medium heat, stirring gently until the eggs are just set. Remove from heat.
04 - Heat tortillas in the microwave for 10 seconds or briefly in a dry skillet until pliable.
05 - Place a tortilla flat and envision it divided into four quadrants. Cut from the center to the edge closest to you. Arrange fillings as follows: scrambled eggs in the bottom left quadrant, hash browns in the bottom right, bacon or sausage in the top right (if using), and shredded cheddar cheese in the top left quadrant. Spoon salsa over desired fillings.
06 - Fold the bottom left quadrant (eggs) upward over the top left (cheese), then fold that over to the top right (meat), and finally fold down over the bottom right (hash browns), forming a layered, triangle-shaped wrap.
07 - Heat remaining 1 teaspoon of butter or oil in the skillet over medium heat. Place the folded wrap seam side down and cook for 2 to 3 minutes per side until crispy and golden brown.
08 - Serve hot with additional salsa if desired.

  • It tastes like you spent way longer on it than you actually did.
  • Everything stays contained and portable, so breakfast doesn't drip on your shirt.
  • You can eat it one-handed while doing literally anything else.

  • If your tortillas are too cold, they'll crack when you fold—warm them or they're not cooperating.
  • The seam goes face-down in the pan because that's where the sealing magic happens and everything gets locked in place.

  • Use a nonstick skillet or your fold will stick and tear—learn from my early mistakes.
  • If you're nervous about the fold, practice once with an empty tortilla so your hands know what they're doing.
