# Directions:
01 - Set oven to 425°F. Line a large baking sheet with parchment paper.
02 - Toss sliced sweet potatoes with olive oil in a large bowl until evenly coated.
03 - Combine Cajun seasoning, smoked paprika, garlic powder, onion powder, dried thyme, salt, black pepper, and optional cayenne in a small bowl.
04 - Sprinkle the seasoning mixture over sweet potatoes and toss thoroughly to ensure even coverage.
05 - Place sweet potato slices in a single layer on the prepared sheet. Roast for 15 minutes.
06 - Turn slices over, then roast an additional 12 to 15 minutes until edges are golden and slightly crisp.
