# Directions:
01 - Preheat the oven to 425°F.
02 - Pat chicken thighs dry with paper towels. Rub with olive oil, kosher salt, and ground black pepper.
03 - In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, minced garlic, dried thyme, and smoked paprika.
04 - Toss carrots, parsnips, sweet potato, and red onion with olive oil, salt, black pepper, and rosemary in a large roasting pan. Spread the vegetables evenly.
05 - Nestle chicken thighs among the vegetables, skin side up. Brush chicken generously with half of the honey glaze.
06 - Roast for 25 minutes, remove the pan, and brush chicken with the remaining glaze. Toss vegetables gently.
07 - Continue roasting for an additional 20 minutes or until chicken skin is golden and crisp and vegetables are tender. Ensure chicken reaches an internal temperature of 165°F.
08 - Remove rosemary sprigs and allow the dish to rest for 5 minutes before serving.
