Lavender Lemonade Spritz (Print version)

A floral blend of lavender syrup, fresh lemon, and sparkling wine for a bright summer sip.

# What You'll Need:

→ Lavender Syrup

01 - 1/2 cup water
02 - 1/2 cup granulated sugar
03 - 1 tablespoon dried culinary lavender

→ Lemonade

04 - 1 cup freshly squeezed lemon juice (approximately 4 lemons)
05 - 1/2 cup cold water
06 - 1/4 cup honey or agave syrup

→ For Serving

07 - 1 cup ice cubes
08 - 1 1/2 cups chilled sparkling wine or prosecco
09 - Lemon slices for garnish
10 - Fresh lavender sprigs for garnish

# Directions:

01 - In a small saucepan, combine water, sugar, and dried lavender. Bring to a simmer over medium heat, stirring until sugar dissolves completely. Remove from heat, cover, and allow to steep for 10 minutes. Strain through fine mesh to remove lavender solids and allow syrup to cool completely.
02 - In a pitcher, combine lemon juice, cold water, and honey or agave syrup. Stir thoroughly until ingredients are well incorporated.
03 - Fill four glasses with ice cubes. Add 2 tablespoons lavender syrup and 1/4 cup lemonade mixture to each glass.
04 - Top each glass with approximately 1/3 cup chilled sparkling wine or prosecco. Stir gently to combine.
05 - Garnish each glass with lemon slices and fresh lavender sprigs. Serve immediately.

# Expert Tips:

01 -
  • The floral notes are subtle enough that even lavender skeptics find themselves reaching for a second glass.
  • You can make the syrup ahead, which means stress-free entertaining on hot days when you'd rather not be near a stove.
  • It works as an elegant cocktail or a refreshing mocktail depending on who's coming over.
02 -
  • If you steep the lavender longer than 10 minutes, it becomes perfume-like and tastes like you're drinking a scented candle, so set a timer and resist the urge to let it go longer.
  • The temperature of your sparkling wine matters more than you'd think—if it's not properly chilled, it will warm the whole drink and flatten the bubbles within minutes.
03 -
  • Double or triple the lavender syrup recipe and store it in the refrigerator for up to two weeks—you'll find yourself reaching for it to drizzle over desserts, mix into cocktails, or stir into iced tea.
  • If you can't find culinary lavender at your grocery store, order it online from a reliable spice company rather than settling for something uncertain, because the difference in taste is absolutely worth the shipping cost.
