06 - 1 large egg
07 - 1 tablespoon milk
08 - 1 tablespoon pure vanilla extract
→ Dipping Chocolate
09 - 6 oz semi-sweet chocolate, chopped
10 - 1 teaspoon coconut oil or vegetable shortening (optional)
# Directions:
01 - Preheat oven to 350°F. Line a baking sheet with parchment paper.
02 - In a small bowl, whisk together flour, baking powder, and salt. Set aside.
03 - In a larger bowl, use an electric mixer or whisk to cream softened butter and granulated sugar until light and fluffy.
04 - Beat in the egg, milk, and vanilla extract until fully incorporated.
05 - Gradually add the dry ingredients to the wet mixture, mixing just until no dry flour remains.
06 - Drop small dough mounds onto the prepared baking sheet using a teaspoon or small cookie scoop, spacing approximately 2 inches apart.
07 - Bake for 12 to 15 minutes until edges turn lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
08 - In a microwave-safe bowl, combine chopped chocolate and coconut oil if using. Microwave in 20-second intervals, stirring after each until smooth and fully melted.
09 - Dip half of each cooled vanilla wafer into the melted chocolate. Allow excess to drip off, place on parchment paper, and refrigerate for 10 minutes to set chocolate if preferred.
